BRICS Summit 2026: Prime Minister Narendra Modi on Saturday hosted a gala dinner for global leaders and other dignitaries at New Delhi's Bharat Mandapam. The menu featured dishes from across India, from regional classics to Old Delhi street-food favourites like paneer lababdar, millet pulao, and beetroot raita.

What's On BRICS Gala Dinner Menu?
Starters
- Khandvi Mille-Feuille: Steamed gram-flour rolls tempered with mustard seeds, coconut, and curry leaves, served with kesar mango, micro-greens, and yoghurt dressing.
- Khumb Galouti: Pan-grilled mushroom kebabs with mint pearls, served on sheermal bread.
Main Course
- Paneer Lababdar: Soft cottage cheese cubes in a rich gravy of shallots and tomato.
- Gucchi Marmik: Himalayan morel mushrooms and asparagus cooked with saffron, raisins, and Mamra almonds.
- Carrot Bean Poriyal: Carrots and green beans cooked with South Indian spices, coconut oil, and fresh coconut.
- Thakkali Belle Saaru: A light toor dal broth cooked with tomatoes and curry leaves.
- Millet Pulao: Basmati rice and pearl millet cooked with spices and seasonal aromatics.
- Beetroot Raita & Breads: Chilled yoghurt with beetroot and herbs.
Assorted Indian Breads.
Desserts
- Old Delhi Fruit Cream with Jalebi: Crispy sweet jalebi served with seasonal fruits and whipped cream.
- Shahtoot Phirni: Slow-cooked milk and rice pudding topped with mulberries and gold leaf.
BRICS Symphony At Gala Dinner
The gala dinner featured a 20- to 25-minute cultural performance titled 'BRICS Symphony,' involving around 160 artistes, with Indian dancers and musicians forming the core of the troupe.

Indian dancers presented classical forms from different parts of India, including Bharatanatyam, Kuchipudi, Odissi, and Kathak, while Indian musicians played traditional instruments, complemented by musicians from some of the other BRICS member countries.
The production is being led by the Indian Council for Cultural Relations (ICCR), the cultural arm of the Ministry of External Affairs. Indian members of the ensemble have been rehearsing for the performance over the past two days.
