Easy Cranberry Matcha Cake Recipe
Ingredients
Dry:
1½ cups all-purpose flour
1 tbsp matcha powder
1 tsp baking powder
½ tsp baking soda
Pinch of salt

Wet:
¾ cup sugar
½ cup vegetable oil (or melted butter)
2 eggs
½ cup milk
½ tsp vanilla extract
1 tsp lemon zest (optional)
Additional:
¾ cup dried U.S. cranberries
Powdered sugar for topping (optional)

Method
Preheat oven to 175°C (350°F). Line a 6–7 inch round cake tin.
In a bowl, mix the flour, matcha, baking powder, baking soda and salt.
In another bowl, whisk together the sugar and oil. Add eggs, milk, vanilla and lemon zest.
Combine the dry and wet mixtures. Note not to overmix.
Fold in the dried U.S. cranberries.
Pour the batter into the cake tin and bake for 30–35 minutes or until a toothpick inserted in the centre comes out clean.
