In 2025, even ice cream is being reimagined through artificial intelligence. Magnum Ice Cream Company (TMICC) unveiled a new collaboration with Chilean startup NotCo AI to reimagine how frozen treats are conceived, made, and consumed. The mission is straightforward but ambitious—make healthier, more innovative ice cream flavours with lower costs and meet new dietary needs.
AI Enters the World of Frozen Desserts
Artificial intelligence has already disrupted the health, robotics, and customer service sectors and is now making its way to the ice cream industry. Using NotCo's Giuseppe AI platform, Magnum aims to drive innovation impossible to achieve through conventional product testing.
The AI is trained on a proprietary database of over a decade of food science and ingredient characteristics. With this information, Giuseppe can suggest new product formulas, adjust nutritional contents to cut out sugar and fat, and even propose cost-effective manufacturing processes.
Healthier and More Sustainable Options
Magnum states that AI would be used to develop lower-calorie and plant-based products in addition to new fresh flavours crafted specifically to keep up with consumer needs. This step aims to keep pace with increasing trends toward eating healthy and being environmentally friendly in food production.
The company has announced that initial AI-infused products would roll out in the US market, followed by overseas launches if the test is a success.

TMICC is among the largest ice cream producers in the world, with the likes of Ben & Jerry's, Cornetto, Popsicle, and Klondike to its credit. By including AI in its product pipeline, Magnum aims to remain at the forefront in a highly competitive environment while providing consumers frozen treats that combine indulgence with innovation.
