Two large beets, peeled and boiled, one cup sugar, half cup unsweetened cocoa powder, half cup all-purpose flour, one-fourth teaspoon salt, half cup melted chocolate, two large eggs and one teaspoon vanilla extract.
Preheat it to 350°F (180°C) so it’s nice and toasty when you’re ready to bake. Grease an 8-inch square baking pan to ensure the brownie doesn’t stick.
Put the boiled beetroot into a blender along with the sugar, eggs, and a splash of vanilla extract. Blend everything together until it’s smooth and creamy.
In a separate bowl, whisk together the flour, cocoa powder, and a pinch of salt. Make sure the dry ingredients are well combined.
Next, combine the dry ingredients with the beet mixture and fold in some melted chocolate. Make sure everything is mixed together well.
Pour that batter into your prepared baking pan. Spread it out evenly, then place it into the oven and bake for about 25-30 minutes.
