One and a half cups of maida, salt, half teaspoon baking powder, half teaspoon baking soda, seven tablespoons sooji, sugar, oil, curd and water.
You need to knead the dough by mixing maida with baking powder, baking soda, sooji, sugar, yoghurt and oil. Cover the dough with a moist cloth for 30-45 minutes.
Make medium-sized balls from the dough and keep them aside. Heat oil in a kadhai and wait for it to get hot.
Make sure to keep the balls covered with a damp cloth. Take a ball and flatten it by rolling it into an oval shape, which is about 2-3 mm thick.
Check whether the oil is hot enough or not. After the oil heats up, put this rolled, oval dough into the kadhai and wait for it to get puffed up.
Rotate the bhatura after getting a light golden colour on one side. Turn over and let it fry by putting a slight pressure on the bhatura with a slotted spoon.
