Take two cups ripe Alphonso mango puree, one cup fox nuts, three cups milk of choice, two tablespoons cashews, one tablespoon ghee, a few cardamoms, and one tablespoon milk powder.
Heat ghee in a pan over medium heat and roast the fox nuts until they are crispy and golden brown. Then, grind them with cashews and cardamom into a coarse powder.
In a pot, boil the milk with the milk powder. Stir it continuously for about ten minutes to keep it smooth and prevent it from sticking to the bottom.
Once the milk is boiling, add the ripe mango puree. Cook it on low heat for five minutes to combine the flavours.
Stir in the ground fox nut and cashew mixture. If the kheer is too thick, you can add a little more milk to reach your preferred consistency.
Continue cooking for another seven to ten minutes until the kheer becomes thick and creamy. Stir occasionally to avoid any sticking.
Let it cool and then serve chilled. You can decorate it with chopped nuts or dried fruits for extra crunch and a nice look.
