Choose the sweetest mango

Select ripe, naturally sweet mangoes; Alphonso or Kesar mangoes will taste the finest without extra sugar.

Blend it

Puree the mango pulp until creamy and smooth (no chunks or lumps) and like a brilliant yellow sunlight.

Increase it

To naturally boost the pulp's flavour, squeeze in some lemon juice or add a tiny teaspoon of cardamom.

Oven-baked or dried

Place the mango pulp on a tray that has been oiled, and then watch it turn leathery by either leaving it in the sun for a few hours or baking it at the lowest temperature for approximately fifteen minutes.

Roll, cut, and enjoy

When the papad has set, you may cut it into strips, roll it up like a candy, or eat it plain without any sugar—it will bring back all the good old days!
