For a deliciously balanced sweet and spicy flavour gather, 1 cup of diced ripe pineapple or mango, 1/2 cup of freshly grated coconut, cumin seed and 2 green chillies.
For a flavourful base, gently cook the diced pineapple with a splash of water and 1/4 cup of sugar, also simmer until most of the water evaporates.
Blend together the grated coconut, green chillies and cumin seeds with a bit of water to create a silky-smooth paste as it is the heart of the dish.
Allowing the flavours to meld beautifully, stir the creamy coconut paste for 5 minutes into the cooked pineapple, mixing them well.
After cooling add 1 cup of plain yoghurt, giving the dish a luscious-tangy finish by mixing thoroughly to ensure every bite is creamy and satisfying.
Serve your delectable Pachadi chilled or at room temperature and enjoy this sweet-tangy treat as part of your Onam feast.
