Take one cup of yellow lentils, one large chopped onion, two medium diced tomatoes, two cloves of garlic and one ginger blended into a paste.
One tablespoon turmeric, one tablespoon cumin seeds, one tablespoon coriander powder, two tablespoons ghee or oil, fresh cilantro for garnish, and two chopped green chillies.
Rinse and soak the lentils, then pressure cook them with turmeric and salt until tender.
Heat ghee or oil in a pan and add cumin seeds, letting them sizzle. Then, add chopped onions, ginger-garlic paste, and green chillies, sautéing until the onions are golden brown.
Add diced tomatoes and cook until they're soft and mushy. Then, add coriander powder and other spices, stirring well.
Add the cooked lentils to the tadka pan, stirring well to combine. Adjust the consistency and seasoning as needed.
Garnish with fresh cilantro and a dollop of ghee, serving hot with rice or roti.
