Two cups of full-cream milk, two tablespoons of rajgira flour or sabudana powder, one teaspoon vanilla essence, two to four tablespoons sugar, one cup mixed fruits (apple, banana, kiwi, strawberry) and saffron strands.
Heat milk in a pan over medium heat, stirring occasionally, and add a few saffron strands for flavour and colour. Mix well to combine.
Gradually add rajgira flour or sabudana powder to the milk, whisking continuously to avoid lumps and ensure a smooth texture.
Add sugar and vanilla essence to the milk mixture, stirring well to combine. Cook over low heat, stirring frequently, until the mixture thickens and coats the back of a spoon.
Remove the custard from the heat and let it cool slightly. Refrigerate for at least 2 hours or overnight to allow the flavours to meld and the custard to chill thoroughly.
Once the custard is chilled, mix it with your choice of chopped fruits, such as apples, bananas, or berries. Serve chilled, garnished with additional fruits or nuts if desired.
