1. Beetroot Raita
One of the easiest ways to add beetroot to your diet is by eating beetroot raita. Raita is basically whisking yoghurt and adding spices, onions, tomatoes and vegetables to it. It is consumed as a side dish to relish a heavy meal and is extremely good for digestion and gut health.
2. Beetroot Paratha
You can also prepare beetroot paratha easily and add innovativeness to your cooking. To prepare beetroot paratha, you just need to grate some beetroots, strain excess water from it and add spices to it. Add some chopped chillies and onions, mix all ingredients well and stuff into paratha.

3. Beetroot Sambharo
Beetroot sambharo is made with finely chopped vegetables such as cabbage, carrots, raw papaya, and radish and combined together. It is an easy pickle recipe from Gujarat made with mixing beetroot, radish, salt and some oil.
4. Beetroot Rasam
Beetroot rasam is a tangy and interesting flavour to your regular rasam. Also known as Beetroot Saaru, beetroot rasam is a classic tomato rasam made by adding beetroot puree to it. This adds beautiful colour, flavour and taste to the rasam.
