Winter Kale Crunch Salad

Sauté kale with very little oil for tenderness, then toss with thinly shaved Brussels sprouts, sliced apple, grated cheese, and toasted pumpkin seeds. Whisk a Dijon-lemon vinaigrette (salad dressing) made with onion, garlic, honey, and olive oil to drizzle over top, enhancing the tangy crunch.

Toast ¼ cup pumpkin seeds in 1 teaspoon oil for 5-10 minutes.

  • Thinly slice kale leaves and Brussels sprouts; mix with cheese and 1 apple.

Brussels Apple Pomegranate Salad

Sauté sliced Brussels sprouts with garlic, then mix into massaged kale alongside oranges, thin apple slices, pomegranate arils, toasted walnuts, and smoky flaked coconut. Finish with a citrus vinaigrette of apple cider vinegar, orange juice, honey, Dijon, and olive oil.

Cook a handful of kale with 1 tbsp of oil; sauté 2 cups of Brussels for 6-8 minutes.

  • Toast ½ cup walnuts and ½ cup coconut with liquid smoke for savory crunch.

  • Layer toppings and drizzle dressing; holds well overnight.

Arugula Mooli Apple Salad

Mix peppery rocket leaves (arugula) or lettuce with diagonal slices of celery or kheera, thin radish rounds, apple matchsticks, cheddar or paneer cubes, and chopped cashews (kaju). A honey-mustard dressing with balsamic vinegar (or black vinegar), honey, pudina chutney, salt, and chaat masala adds tangy desi zing.

  • Slice 1 cup radish, 1 apple, and ½ cup cucumber thinly.

  • Toast ¼ cup cashews; cube ½ cup cheese or paneer.

  • Shred 3 cups of greens; chop ½ cup each of nuts and cheese.

  • Whisk and drizzle dressing; customizable with fridge finds.
