Besan Barfi

A quick besan barfi is Diwali’s comfort sweet dish. All you need to do is roast besan in hot ghee until it smells nutty, add powdered sugar and a splash of milk or condensed milk to bind and then press into a tray. Chill for 10-12 minutes, slice into diamond-shapes and garnish with pistachios.

Kaju Katli

This is an iconic sweet and requires only 20-25 minutes to prepare. Crush cashews to a fine powder, add hot sugar syrup and cook on low heat briefly with some ghee until it comes together. Roll between parchment and cut diamonds. Finish with a thin sheet of varak or chopped pistachio.

Coconut Ladoo

The classic coconut laddoo take 10-15 minutes time to prepare with the help of condensed milk. Toast desiccated coconut lightly in ghee, pour in condensed milk and stir on low heat until the mix leaves the sides. Chill for a few minutes and shape them into small balls and add chopped nuts for extra crunch. You can also add cardamom or a pinch of saffron to level up the festive vibe.

Rava Kesari

Semolina halwa is known for its aromatic and saffron-rich flavour and is a quick and easy dessert for Diwali. Roast rava for a few minutes in ghee, add hot milk, sugar and a pinch of saffron. Stir until it thickens into a glossy halwa and finish with roasted nuts. Keep the flame medium-low and stir to avoid lumps. This sweet dish can be prepared under 15-20 minutes.

Mawa Modak

Although people think that preparation of modak is complicated, it is not always. Use ready mawa (khoya) or thickened milk solids and mix with sugar, cardamom and chopped nuts to give the shapes of modaks or small round peda-style sweets. A brief chill and dust with edible silver will give you the authentic modal look that is rich in taste and looks festive. It takes just 20 minutes to prepare.

Instant Milk Powder Kalakand

When rushing through the Diwali preparation, the sweet-tooth demands Kalakand as mithai. By combining milk powder, ghee and a splash of condensed milk, kalakand can be made in 15-20 minutes. The texture is soft, slightly grainy and provide melt-in-the-mouth experience.

Peda

Pedas are festive, portable, and perfect for gifting. Use ready mawa, crumble and cook gently with sugar (or condensed milk) and add a touch of cardamom till it binds into a soft dough. Give them small round or rectangle shapes, press a pistachio on top and cool slightly. You can keep this for a few days as well.
