Poila Baisakh 2025 Bengali Food: Also known as Subho Noboborsho, Poila Baisakh is a festival that marks the beginning of the Bengali New Year. Poila Baisakh 2025 falls on April 15. Also known as Pohela Boishakh, this festival is celebrated by Bengalis in India as well as in Bangladesh. Bengalis celebrate the day by waking up in the morning, wearing traditional attire and offering prayers to Lord Ganesha and Goddess Lakshmi to seek prosperity and happiness in the year ahead. Apart from all the rituals, Bengalis can’t miss out on a delicious feast. On this day, they come together and enjoy mouthwatering food with families and friends.

Bengalis wait for the Bengali New Year to indulge in aromatic Bengali treats. Bengali households around West Bengal, especially in Kolkata, make traditional recipes specifically on this day. These foods have the essence of different spices and are vibrant in colour. From starters to main course to desserts, the tables of Bengali households are filled with authentic Bengali foods. Fish Fry

This is a beloved Bengali dish that is a must as a starter. Kolkata-style Bhetki fish fry is crispy golden brown delight that is often enjoyed with kasundi (Bengali mustard sauce). To make this, the Bhetki fish is cut into slices and deboned and marinated with masalas and onion and ginger-garlic paste. They are then coated in bred crumbs and deep fried. 

Luchi And Cholar Dal

Nothing can be better than the golden, puffed-up bread, called Luchi, served alongside a heart bowl of Cholar Dal. The dal is cooked with coconut, ginger and cumin that add a spicy kick to the combo. Scholar dal has hints of sweetness and savoury touch to it. Luchi and Cholar Dal is considered a perfect dish for the Bengali New Year.

Basanti Pulao

This is a fragrant and mildly sweet rice dish and one of Bengali’s favourite. This is made by cooking basmati rice, saffron or turmeric to give it a vibrant yellow colour. This dish is spiced with aromatic whole spices like cinnamon, bay leaf, and cloves. Cashews and raisins add texture to the dish. This rice dish is best served with kosha mangsho or aloo dum.

Kosha Mangsho

This dish is for all the meat lovers. Kosha Mangsho is a spicy mutton curry that is made with a blend of spices, onion and tomatoes. The delicate mutton pieces offer a melt-in-mouth experience. It tastes best with luchi or basanti pulao.

Mishti Doi

Just like Bengalis can’t miss out Rasgulla, Misti Doi is one of the desserts that has to be there on the Noboborsho food menu list. This dessert is made from sweetened yoghurt and is baked and chilled in an earthen pot. This dessert at the end of the Poila Baisakh feast is a must-have, owing to its creamy, tangy and delicious taste.
