Summer is synonymous with mangoes and for all the right reasons. Mango lovers wait for the summer season to savour the sweet, juicy mangoes. Also known as the ‘king of fruits,’ mangoes are vibrant in colour and nothing can be more enjoyable than eating the first slice of juicy mangoes. Moreover, there are versatile dishes that can be made with mangoes, ranging from aamras with puris to thick mango milkshakes to even spicy mango curries; they are always a hit, a summer staple. As much as people love mangoes, what comes as a disappointment is slicing open a perfectly ripe mango only to find brown, mushy spots inside. The browning of the mango flesh is not just unappealing but also affects the taste and texture of the fruit. However, with certain hacks, the browning of the mango flesh can be prevented and it can be kept fresh for longer.
Why Do Mango Flesh Turn Brown?
Mangoes turn brown due to oxidation. Once the enzymes in mangoes, particularly polyphenol oxidase, are exposed to air, they react and start turning the surface dark. The same thing happens with bananas and apples. The more the mango is exposed to air, the quicker it changes colour. By following these five hacks, you can keep your favourite mangoes fresh for longer.
Tips To Prevent Mango Flesh From Turning Brown
Use Lemon Juice
Mango flesh can be prevented from browning by adding a little lemon juice over it. The citric acid slows down oxidation and protects the colour. Besides, it adds a slight zing that makes the fruit taste even sweeter. This hack is perfect for keeping them fresh for longer, if using for salads or desserts.
Pick A Stainless Steel Knife
The choice of knife matters the most. Carbon steel blades can trigger a reaction with the fruit's enzymes, speeding up the browning. Always use a stainless steel knife as it is cleaner, safer and less reactive. Avoid old or rusted knives. They may introduce bacteria that can cause those dreaded black spots.

Cut Only What Will Be Used
The more surface of the mango is exposed, the faster it will turn brown. If you do not plan to eat the whole fruit, cut just enough and refrigerate the rest in a sealed container. Slicing only what is needed keeps the rest of the mango fresh for longer for later use.

Skip Mangoes That Are Too Soft
Soft and patchy mangoes are already halfway to being spoiled. Always opt for firm mangoes with a sweet aroma and smooth skin. If there are black or brown patches while cutting, just scoop them before they affect the whole fruit. Note to handle the mangoes with care as they get easily bruised.
Store Them
After cutting the mangoes, put them straight into the fridge. Air exposure speeds up browning. Store slices in an airtight container. You can also dry paper towels inside to soak up moisture and keep them fresher longer.
