Ragi flour, derived from finger millet, is rich in calcium, iron, and dietary fiber, making it beneficial for bone health, anemia prevention, and digestive health.
To make Ragi Roti, you'll need the whole wheat flour, water, salt, ghee or oil (for cooking), and optional ingredient chopped cilantro or other herbs for flavour.
In a mixing bowl, combine 1 cup of ragi flour (finger millet flour), 1/4 cup of finely chopped onions, 1/4 cup of chopped coriander leaves, a pinch of salt, and water as needed to make a soft dough.
Divide the dough into small lemon-sized balls.
Take a dough ball and flatten it on a clean surface using your palm to form a disc. Use a rolling pin to roll it into a round roti of about 1/4 inch thickness.
Heat a tawa (griddle) over medium heat. Once hot, carefully transfer the rolled roti onto the tawa. Cook for about a minute or until bubbles start to appear on the surface.
Flip the roti and cook the other side for another minute. You can drizzle a little oil or ghee around the edges if desired for added flavour and crispiness.
Once both sides are cooked and have brown spots, remove the roti from the tawa and serve hot with your favourite curry, chutney, or yogurt.
