Poha
This is India’s favourite breakfast made of flattened rice. Poha is popular in Maharashtra, Madhya Pradesh and other regions of India. It is a gluten-free food and is easy to prepare. The flattened rice is sauteed with mustard seeds, curry leaves, onions, peas and other seasonal vegetables. A pinch of turmeric is added for the vibrant colour. It is topped with coriander leaves, roasted peanuts, and lemon juice drizzled for an added tangy taste.
Idli
This is a staple South Indian breakfast and is gluten-free. Idli are soft, steamed rice cakes made from fermented batter of rice and urad dal. Steamed idlis are rich in probiotics, which helps in easy digestion. They are typically served with coconut chutney and sambar.
Besan Chilla
Besan Chilla is an easy, go-to and gluten-free recipe for breakfast. This dish can be prepared by grinding besan into a paste and mixing it with water, turmeric, chillies, and spices like cumin and coriander. To make it extra healthy, add vegetables like onions, carrots, capsicum, green beans, tomatoes, and spinach. The batter is spread on a griddle and pan-cooked into spicy and savory pancakes that are crispy on the outside and soft on the inside. It can be served with mint chutney or yogurt.
Dosa
This is South India’s favourite gluten-free, low-calorie breakfast. It is made of fermented rice and urad dal. A thin coat of batter is spread over a hot griddle to form crispy, golden pancakes known as dosas. Dosa is usually served with coconut chutney and sambar. Moreover, dosa can be stuffed with potato filling (masala dosa) for added taste and nutrition.
Sabudana Khichdi
This is a gluten-free food that is mostly consumed during the fasting season, especially in the states of Maharashtra, Uttar Pardesh, and other parts of India. Sabudana or tapioca pearls are soaked and later cooked with potato, peanuts and mild spices like cumin, coriander and green chillies. Sabudana are tender and chewy in nature. It is a highly satisfying dish for breakfast and is mostly served with yogurt for added protein and taste.
