Fermented Curd Rice Recipe

Ingredients:

Softly cooked rice

Curd

Milk

Coriander/ cilantro leaves

Oil

Black mustard seeds

Cumin seeds

Dried red chilies

Green chilies

Ginger

Method:

Cook the rice until soft. After draining the starch, mash the rice with the help of a ladle or masher. 

Transfer it to a large, flattish bowl so the rice can cool.

Once the rice has cooled down slightly, add the milk and curd. Keep the curd rice in the fridge or under the fan to ferment for a bit.

In a pan, add oil and heat it to steaming hot.  Add the grated/pounded ginger, green chilies, mustard, curry leaves and cumin.

Allow the ingredients to sizzle in the oil and transfer the tadka into the fermented curd rice.

For extra flavour, add pomegranate arils, pineapple bits and grapes.
