We've all been there searching through our kitchen for vegetables and come upon the revelation that we have none. In those scenarios, many households turn to ingenious and clever recipes. And one such dish is papad ki sabzi, a rich and inviting dish whose finest perch is a rainy day or in the winter. This true Marwari cuisine is a staple in many homes as a hearty and fulfilling meal. Its appeal is largely because of its simplicity and humility. It comes together easily with little to no fuss, few ingredients and is one of those meals that takes everyone back to their grandmother's kitchen and those feelings of warmth and cosiness.
Papad ki sabzi is interesting because you can have it any time of day (as a snack, or main dish). Here is a quick and simple recipe for this dish that you can prepare in just 10 minutes.
Ingredients Required
- 6-7 papads
- 2-3 onions, finely chopped
- 2 tomatoes, pureed or chopped
- Green chillies
- Ginger-garlic paste
- Curd or cream
- Basic spices: Turmeric, coriander powder, red chilli powder, garam masala
- Fresh coriander leaves for garnishing

Papad Ki Sabzi: Recipe
Step 1
Heat Oil And Sauté Spices- In a pan, heat oil, then add cumin seeds and chopped onions. Once the onions are translucent, sauté until they begin browning.
Step 2
Create A Base- Add ginger-garlic paste and chopped tomatoes to the onions to create a rich, spicy base. Cook until the oil separates.
Step 3
Add Curd And Prepare Papads- Mix spoonfuls of curd to bring cream to the gravy base. Prepare papads by roasting them in a pan / with only a little hot oil until just crisp.

Step 4
Stir Papads And Gravy- Break the prepared papads into pieces and stir them into the curry. Boil for a moment to retain some crispness.
Step 5
Finishing Touch- The final touch is to add garam masala and fresh coriander as a garnish.
For the best quality and flavour, add the papads right before you serve the dish. This way, they will not get soggy or lose their crunch, so you can enjoy a delicious and flavour-packed meal.
